The Best Grilled Cheese Ever

I feel like if I ever post a recipe, it's something healthy. While grilled cheese typically isn't that great for you, I think I can pass it off as healthy. If not, it has guacamole so it's healthy for your soul--so good enough for me!

Really though, it has guacamole and bacon! The things you can find on Pinterest amaze me. I literally gasped when I found it and yelled "we have to make this!"

I found the original recipe here, but I created my own guac for it. 


To make the grilled cheese it's pretty basic (I mean it is just a grilled cheese):

Ingredients:

  • 2 slices of bacon
  • 2 slices of bread
  • 1 tablespoon butter, room temperature
  • 1/2 cup jack and cheddar cheese, shredded
  • 2 tablespoons guacamole, room temperature

Directions:

1. Cook the bacon until crispy and set aside on paper towels to drain.

2. Butter one side of each slice of bread, sprinkle half of the cheese onto the unbuttered side of one slice of bread followed by the guacamole, bacon, tortilla chips, the remaining cheese and finally top with the remaining slice of bread with the buttered side up.

3. Grill over medium heat until golden brown and the cheese has melted, about 2-3 minutes per side.

Guacamole (makes just enough for two of these!):

1 ripe avacado mashed
1 slice of red onion chopped 
1/2 clove of garlic
1 tsp lime juice
a pinch of kosher salt

Mix everything together and make the best grilled cheese I've ever had!

I promise you it's amazing and you are not being misguided--I don't joke with food.
